An aromatic herb that gives a pleasant, slightly spicy flavour.
Parsley is a good source of vitamins A and C and mineral salts (calcium, iron, phosphorus and potassium). Parsley taken in small doses, opens the appetite and helps digestion.
Parsley comes from the rocky coasts of the Mediterranean region.
It is usually used fresh and chopped and added to soups and meat and fish stews. It is not usually bought but is given to clients.
