A cheese made by Formatges de la Vall de Meranges, in the village of Girul in the Girona region of La Cerdanya. It is the only farm in the Catalan Pyrenees that makes cheese with the milk of its own flock of sheep.
Made with raw sheep's milk. The maturing period is approximately 3 months
It is semi-mature, with a mild taste, and a slightly acid touch without being too much, and it is slightly salty. .
From the outside it looks like Camembert but it is greyer. The taste is an earthy ochre colour and it is semi-soft.
It goes down very well before sweet desserts or quince jelly, or accompanied by celery, a young red wine or a cava.
